From scratch Vegetable Beef Soup!

The best $1.26 I ever spent was on 1.26 pounds of beef soup bones from White Oak Hill Farms, Inc.!!!! I was nervous to make beef broth because I thought it was harder than chicken broth. Nope! Here’s my recipe for Vegetable Beef Soup: put approx 1 pound of meaty soup bones from White Oak Hill Farms in a soup pot and cook in the oven for 30 mins at 400 degrees, turning the meat a few times. Add one onion, quartered and a few carrot pieces. Bake another 30 mins, turning the meat a few times. Take out of oven, removed carrots and onion, add 1-2 cups water and mix stirring in all the yummies at the bottom of the pan. It should look like broth now. Add 5-6 more cups of water. Put on stove and bring to a boil. Turn to low and simmer for 4-5 hours, adding water as needed. Take out bones and cut the meat off, cutting in small pieces and return them to the broth. Add salt to taste. Add desired vegetables, we used 1 pound of frozen mixed veggies and 2 small cans of sliced potatoes. Heat til veggies are warm! Yummy!!! This made enough soup for 7 people with one bowl leftover for the next day!!!
